Organic Italian Ciabatta Flour

First produced in Northern Italy as a rough flour suitable for Ciabatta bread. "Ciabatta" means slipper, and the bread acquires its name from the characteristic shape of the loaf. This is a lively flour with a coarser texture than typical white bread flours. It assists in the creation of the large air bubbles that develop during the fermentation that are typical of Ciabatta loaves.
