This spanish marinade is absolutely perfect for pork or lamb. Leave overnight if possible and then grill or bbq slowly for really tasty and tender meat. For vegetarians it is great over stuffed aubergines. It can also be used as a Spanish style pesto, great with chorizo and shredded cabbage.

Flavoured with smoked paprika, fennel and saffron.
